FRESH ZUCCHINI PASTA

INGREDIENTS:

  • 4 Zucchinis
  • 1 cup of Cherry Tomatoes
  • 1/2 bunch of mint
  • 3 Limes
  • 1 chilli
  •  3 Tbsp Olive oil
  • 1/2 Tbsp Black sesame seeds

METHOD:

  • Use a spiralizer to make the zucchini noodles.
  • Add the Zucchinis to a large bowel and toss in chopped tomatoes.
  • Add mint, sesame seeds and chilli.
  • Dress with limes and olive oil to taste.

I first made this recipe to take to a Dinner party. Simple, easy, affordable and clean. And what a hit it was! If you are making this at home for your regular meals I would suggest you add additional protein to balance out the meal. 100g of chicken, tuna steak or smoked salmon would work a treat!
