Banana Pancakes with all the Toppings!

   
Ingredients for the pancakes (makes 1 serving):

  • 1 banana
  • 1 egg
  • 1/4 cup oats
  • 1 tsp cinnamon

Toppings:

  • 1/4 Greek yogurt
  • 1/4 cup blueberries
  • 1 tsp flax seeds
  • 1 tsp chia seeds
  • 1/2 tsp sunflower seeds
  • 1 tablespoon pepitas
  • 1 tsp honey 
  • Cinnamon

Directions: 

  • Add all of the pancake ingredients to a blender and blend until smooth
  • In lightly greased pan over medium heat, add your batter (make a giant one, a bunch of small ones, whatever sounds good to you!) and cook a few minutes each side. 
  • Make your pancake beautiful with all the toppings!
