Cinnamon Quinoa Granola with all the Nuts and Seeds!

  
 
Ingredients (makes 6 servings):

  • 1/3 cup dry quinoa 
  • 1/2 cup oats
  • 1/4 cup pepitas
  • 2 TBSP chia seeds
  • 2 TBSP flax seeds
  • 1 TBSP sunflower seeds 
  • 12 Almonds 
  • 2 TBSP honey 
  • 2 tsp cinnamon
  • 1 TBSP coconut oil

Method:

  • Cook the quinoa according to the package (for slightly crunchier quinoa, omit a couple tablespoons of water from what the recipe calls for). 
  • Add the cooked quinoa to a bowl with all of the other ingredients and mix. 
  • Spread mixture evenly on a parchment paper lined baking pan and bake at 275 degrees F for 25 minutes. After the first 15 minutes, mix the granola so that it bakes evenly. 
  • Let cool and then break into pieces.
