Most Delicious Spinach Quinoa “Burgers”

Ingredients (makes 10 servings):

  • 1 cup uncooked quinoa
  • 3/4 cup oats
  • 4 eggs
  • 7 ounces feta cheese 
  • 4 cups chopped spinach 
  • 1/2 cup chopped sundried tomatoes
  • 1 cup chopped portobello mushrooms
  • Salt and pepper
  • Coconut oil (1-2 tbsp)


  • Cook the quinoa according to the package and set in the fridge to cool for about 30 minutes 
  • Add the remaining ingredients to a bowl and mix to combine. 
  • Add the chilled quinoa to the mixture
  • Season to taste with salt and pepper
  • Form 10 “burger” patties and cook in a pan using the coconut oil (about 3-4 minutes on each side)

  • Protein: 10.5 grams
  • Carbohydrate: 9 grams
  • Fat: 17.4 grams
