What do you reach for when that 3 o’clock snack attack hits? Why not make it something that is crunchy, slightly salty, inexpensive, and healthy? Are all of those things possible in one tiny little snack? You bet!
- 1 to 2 cans of chickpeas
- 1 tsp coconut oil
- Your spice of choice (paprika,garlic, you name it- go for it!)
Drain and rinse the chickpeas and place on a baking paper lined baking tray. Try your best to let them get as dry as possible. Toss the coconut oil on the chickpeas and evenly coat. Sprinkle on your favorite spices. Try to spread the chickpeas all around so they can crunch up on all sides.
In a cool oven, pop in the tray of chickpeas and heat the oven to 200 degrees C. Cook for about 40 minutes, stirring around a couple times during the process. Cut the oven off and let the chickpeas stay in the oven until they cool off, this will help to crisp them right up!
The last step. Try REALLY hard not to eat the entire batch in one go…
